About the Book

FROM GRAND FIESTAS TO HUMBLE FAMILY TABLES, PORK HAS LONG OCCUPIED A SPECIAL PLACE IN FILIPINO LIFE. THIS VOLUME IS AN UNAPOLOGETIC CELEBRATION OF THE PHILIPPINES’ ENDURING LOVE AFFAIR WITH THE PIG, BRINGING TOGETHER CHERISHED RECIPES, CULINARY TRADITIONS, AND THE SHARED PLEASURES OF GOOD FOOD. A TRIBUTE TO THE FLAVORS THAT DEFINE US, THE MEMORIES THAT UNITE US, AND THE SIMPLE CONVICTION THAT EVERYTHING IS BETTER WITH PORK.

Where there is pork, there is hope.

There are many things Filipinos disagree about. Politics. Religion. Traffic. Basketball. The proper way to cook adobo. But on one matter, we are remarkably united: pork makes everything better.

In Pork We Trust: A Filipino Cookbook of Sin and Satisfaction is Tina Concepcion-Diaz’s unabashed celebration of the Philippines’ enduring love affair with the pig. With recipes contributed by friends, Tina serves up pork roasted, grilled, fried, simmered, and gloriously crisp, alongside the memories and traditions that make every dish unmistakably Filipino.

These are recipes for fiestas and family gatherings, birthdays and baptisms, Christmases and ordinary Sundays. For generous tables, drinking sessions, second helpings, and arguments over the last piece of crispy skin. Part cookbook, part love letter, and entirely unapologetic. Filipinos may never agree on everything. Thankfully, we have pork.
