How to Cook Succulent and Tender Chicken Breasts

This is an easy, reliable method for achieving tender, moist chicken breasts. While we prefer dark meat, which is harder to overcook and tends to be juicy and flavorful no matter what, we know that lots of folks prefer breasts to thighs.

 

How to Cook Succulent and Tender Chicken Breasts

 

Pound to an even ¾-inch thickness with a mallet:

1 to 4 boneless skinless chicken breasts

If the breasts are very thick, you can cut them in two halves instead of pounding them.

Sprinkle with:

Salt

Black pepper

(Any seasoning blend or your favorite herbs)

If desired, dredge the chicken breasts in:

(All purpose flour)

Heat in a large pan over medium-high heat:

            1 tablespoon vegetable oil

When the oil is hot, place the chicken breasts in the pan and cook for 1 minute. 

Turn the chicken, and immediately cover the pan. Reduce the heat to low and cook for 10 minutes. Do not disturb the lid or open it. 

Turn off the heat and let the chicken breasts rest for 10 minutes, keeping the pan covered.
